Vedge has been pushing the boundaries of what is possible with vegetables since it opened. Rather than relying on faux meats, chefs Richard Landau and Kate Jacoby focus entirely on coaxing incredible, complex flavors out of seasonal produce.

The menu is designed for sharing, featuring sections ranging from cold 'dirt list' items to richer, wood-roasted plates. Their rutabaga fondue with warm pretzel bread and their wood-roasted carrots are universally praised by both vegans and omnivores alike.
